Simply Perfect Pancakes with Caramelised Apples

Im not a big breakfast guy, probably because im not the greatest morning person either. My normal everyday breakfast is either cereal or, if I don’t have time at home, I grab some toast from the office cafeteria, simple and mundane and wholly uninteresting. Sometimes though, on the weekend with some spare time, there is nothing better than something more substantial and my favourite would have to be pancakes. The recipe comes from King Arthur Flour and they declare this recipe “simply perfect” and whilst I’ve tried too few recipes to agree or disagree they were pretty damn good. They suggest using malt powder but I only had sugar so just used that and I would suggest upping it from 2 to 3 tablespoons. Continue reading


Caramelized Peanuts

Im just gonna come straight out and say these are good, no amazing, additive even. I tried to make these a while back but failed terribly, so with some time on my hands as well as all the ingredients I decided to try again. I didnt really know what I was going to use them for but they are great for snacking on or as a topping for ice cream (which was what I used some for). Looking back at my previous failure im not sure what went wrong because this time everything seemed simple and easy and they came out just fine. I should forewarn you that this recipe makes a lot, I halved the recipe and still had plenty but the combination of salty peanuts and caramel is seriously tasty so I had no problems getting rid of them. The original recipe (more technique than recipe) come from the Pierre Herme “Chocolate Desserts” book and so unsurprisingly they are originally coated in tempered chocolate but I wasnt in the mood to attempt tempering, but next time definately because that would simply be amazing. Caramelized White Chocolate (in Ginger Ice Cream)

Do you ever see something online and just cant get it out of your head (no nothing like THAT!!). A couple of weeks ago David Lebovitz posted about his visit to the L’ecole du Grand Chocolate Valhrona and the new technique he learnt, how to caramelise white chocolate. Im one of those people that actually like white chocolate, I really like its creamy taste and so this idea seemed like heaven. Even more delicious sounding though was the idea he mentioned as an aside, fresh ginger ice cream with the chocolate swirled in. Sounds good doesn’t it. Well I couldnt wait any longer and as the weather was perfect this weekend I decided it was time to try it out. Continue reading
