In the UK we dont normally have American style pancakes were more of a crepe style people. So today i ventured into unknown territory and whipped up a batch of apple pancakes the recipe again being spotted on Smittenkitchen.com. I decided to add a little cinnamon to it just to give a bit of depth, and whilst i had some problems with the cooking (too hot so the outside cooked too fast) they tasted great
2 Eggs well beaten
1 1/2 cups of Milk
2 cups Plain flour
1 tsp Baking powder
1/2 tsp Salt
1/4 cup Sugar
3 medium apples, peeled and coarsely grated
Vegetable oil, for frying
Confectioner’s sugar, for dusting
1. MIx the eggs with the milk and set aside
2. In a separate bowl whisk the flour, salt, baking powder and sugar together
3. Mix together the wet and dry ingredients and gently mix to incorporate
4. Heat a thin layer of oil on a low to medium heat, pour batter for desired size into the pan a cook until the underside is golden brown then flip and cook for a few minutes more.
5. To serve dust with icing sugar
